This weekend we are serving Pork Tenderloin with gorgonzola sauce, roasted grenailles, roasted tomato and wild broccoli.
Gorgonzola is a straw-white cheese whose green spots are the result of a process called marbling, or mould formation. It has a creamy, smooth texture and an unmistakable aroma with a distinctive flavour. Used in sauces, it mellows and enhances the flavour of meat and vegetables. Wild broccoli (broccoli florets) completes the weekend flavour composition. The young, tender shoots are used in the kitchen. Its season is very short, so it's best not to delay discovering it.
